I'm curious how accurate these machines actually are. I had my numbers ran and have a hard time believing the machine can tell me accurate readings based off just standing on it and holding the paddles.

Not accurate I have a body analyzer scale and it is not accurate. Estimates much higher in my personal experience
 
The one I have varies wildly depending on how hydrated I am. Dehydrated, I've gotten readings as low as 12% and overly hydrated they've been in the mid-20's... sometimes in the same day. Mine is a glorified bathroom scale now.

Get calipers, same
Conditions, same person same time every week or two if you can
 
I own one of those and an inbody machine. The inbody we have measured against a dunk tank and is within 2%. The tanita is not nearly as good, but at a fraction of the price it is still pretty good. Just measure at the same time every day, keep your hydration level consistent, and don't measure after a workout.
