If you don't know how much you're eating, how do you know what to adjust?
I'm good friends with a supplement shop owner, know him for years, and for years he drilled into me to count my macros. Never did. Always thought "ehhh fuck that, I'll just drink more shakes to get bigger" that's when I was 6'3" and 180lbs. I'm now 215 on a lean day and up to 220 after some good eating. I had to count my macros to realize I was barely eating carbs and barely eating 1g per lb of body weight.
Count the macros for a full week. Don't change your diet. Come back and let's revisit and and tweak. Best advice I can give is the best advice I ever got.
