Just do bone in. It adds flavor [emoji23]We’d be like fillet or chicken breast. Lean but basically flavorless and real dry - probably stringy.
A big fatty would have more depth of flavor and the seasoning would more easily permeate. Probably good with fava beans and a nice Chianti.
