5x5 routine and question on deloading

I've been doing the 5x5 routine and have some doubts about deloading.
First off, this is what I've been doing:

Monday: Squat, Bench, Rows, Bi and Tri assist
Wednesday: Squat, Incline Bench, Dead, Military press, Pull-up
Friday: Squat, Bench, Row, Dips, Bi assist

When deloading should I reduce the amount of exercises (eg letting go of any assisting exercises), or simply reduce number of sets or reps. A combination of these different alternatives?
Also, am I doing too much in the regular loading above or is this ok. I know it might differ with each person but what do you think?

Ok, I did some more reading on the stickies and other stuff and figured I should drop to 2x/wk squat and 3x3, basically reducing volume while going heavier. Is this right? anyone?
 
Yeah thats right. 2x squat and 3x3. I belive you should be doing incline bench OR military press on Wed, not both. The first week of 3x3 you should use all the same weight as the last week 5x5.
