Iv'e got a good Tuna shake concoction.....check the cottage cheese thread......yummy.......80 grams of protein for under a dollar....

mmmmmm salsa chicken

chicken breasts
1 green pepper
1 red pepper
1 red onion
salsa
cheddar cheese

cut up peppers and onion. place chicken in a baking pan and top with peppers and onion. pour salsa over it. Bake in oven, for the last few minutes put cheddar cheese on it to melt. This goes good with rice, the salsa leaves a lot of juice.

Heres an easy one that i enjoy:

flour tortillas from supermarket
microwaveable brown rice
2 cans tuna
2 cans chicken
1 can black beans
1 can red beans

cook the rice, cut up the chicken and tuna and put it all in a large tupperware container. mix in the 2 cans of beans and you have a nice healthy mixture for a quick snack. i make this once a week and it lasts me for the rest of the week, and since i'm always on the run i can pop some on a tortilla and throw it in the microwave for :45 take it out put some cheese and hot sauce on it, fold it up for the car ride and roll. its easy and you can make them whatever size you want to.

i make chicken salad replacing the mayo with hummus which is low-fat and has quite a bit of fiber. i usually cut up 3-6 breasts and add celery, chick peas, kidney beans, chopped tomato, cilantro and some fresh lime juice. tastes great, the celery gives it some crunch and it's very healty. you can add or subtract ingredients as per your tastes. it's great for snacking on its own or with some reduced fat wheatables. 6 breasts last me 3-4 days so it's convenient too.
