Anyone use deer meat as they're #1 protein source

Very rarely do I ever buy beef. I just deer hunt and butcher my own. Almost no fat and stupid cheap just takes some time to cut. Super easy on the wallet for weekly meal prep.

Hello yeah I make about 20lbs of it a year. Deer not moose, no moose this far south.
 
I do most of mine in the smoker with very little seasoning much more healthy than using the box stuff.
 
I've never wrote the recipe down so it always ends up a little bit different each time. The key is to have a good meatslicer so you can get good consistently thin slices and a smoker but I guess you could probably do it in the oven but ive never tried. I take about 6 lbs and cut to around 1/8 to 1/4inch against the grain. Place meat in a large mixing bowl add half a bottle of moores or dales low sodium, 1 tbs onion powder, half of a small clove of garlic crushed, a handful of black peppercorns, and last time I think I added half a cup of A1 steak sauce. Then you cover it the rest of the way with water mix it good by hand and let it set in the fridge covered for a couple days. Then put it in the smoker at 140 degrees fahrenheit for about 4 1/2 hours then check on it depending on how dry you like it, it may be done. I think that's everything. It's usually something I change up every time I do it but that's about the basics of it. I've tried different wood chips but we seem to like applewood better.
 
That kinda of does seem like a lot of moores or dales marinade but I don't really think its that bad for 6lbs. Just woke my wife up after giving me a very evil look she said it's about 6 oz of moores low sodium.

Lol! Thanks! I've got a Traeger pellet grill that I smoke pork on, it should work well. I cut the inner loins and haven't found a healthy recipe for them, I may slice them and smoke em. Might be my weekend event :) How long do you store those?
 
It usually only lasts a couple of weeks but I keep most of it in the fridge just to be on the safe side. I've never really tried to see how long it would last....not enough willpower.

I grind a lot of the deer, my wife bought one of those jerky guns from Cabelas...any way those strips last us a few days then they're GONE!
 
Yeah my wife likes the ground better. She does those in the dehydrater and uses the boxed seasoning tastes good but no telling what all is in that shit.lol
 
That's what we do. The box dehydrator with the plastic shelves. I never thought of using the smoker. I think my lowest setting is 150°

I need to invest in a meat slicer and a smoker. This sounds tasty. Thanks for sharing. Bookmarking for sure.

Dude. I eat it 2-3x a week. I killed 5 this year, 9 last year, 7 year before ....I live off that stuff. My kids tear it up!
