AmenVery rarely do I ever buy beef. I just deer hunt and butcher my own. Almost no fat and stupid cheap just takes some time to cut. Super easy on the wallet for weekly meal prep.

I do most of mine in the smoker with very little seasoning much more healthy than using the box stuff.
That kinda of does seem like a lot of moores or dales marinade but I don't really think its that bad for 6lbs. Just woke my wife up after giving me a very evil look she said it's about 6 oz of moores low sodium.
It usually only lasts a couple of weeks but I keep most of it in the fridge just to be on the safe side. I've never really tried to see how long it would last....not enough willpower.
Does the ground do ok in your smoker?
I've never wrote the recipe down so it always ends up a little bit different each time. The key is to have a good meatslicer so you can get good consistently thin slices and a smoker but I guess you could probably do it in the oven but ive never tried. I take about 6 lbs and cut to around 1/8 to 1/4inch against the grain. Place meat in a large mixing bowl add half a bottle of moores or dales low sodium, 1 tbs onion powder, half of a small clove of garlic crushed, a handful of black peppercorns, and last time I think I added half a cup of A1 steak sauce. Then you cover it the rest of the way with water mix it good by hand and let it set in the fridge covered for a couple days. Then put it in the smoker at 140 degrees fahrenheit for about 4 1/2 hours then check on it depending on how dry you like it, it may be done. I think that's everything. It's usually something I change up every time I do it but that's about the basics of it. I've tried different wood chips but we seem to like applewood better.
