Ok, after a ten week diet I'm ready to start packing on some pounds. My diet phase consisted of 2000 calories a day. Dropped 3 inches off my waist, lost a little strength. How should I approach my bulking diet? I'll be taking in 3500-4000 calories. I would like to keep fat gains to a minimum. Should I slowly add calories in over the course of a few weeks or can I just jump right into it and increase it 1500 calories? Do i need time to let my body adjust to the extra food?

Just adding in your maintenance cals you will pick up some of that muscle back.
What was the diet like?
If it was low carb then add in the carbs slowly and use lower GI carbs like vegetables and some fruits till your body gets used to it again.

The diet wasn't anything special. I just cut back on my calories by eliminating all milk and weight gain shakes. I normally drink 1/2 gallon a day so that was 800-900 calories right there, and weight gainer was substituted with just whey and water. Carb sources were potatos, rice, beans and veggies. Protein was chicken, lean ground beef/turkey, and steak. Plus one tablespoon of fish oil and nuts for fats.

The bulking plan will be to add back in milk and double up on my carb intake. Protein is about 50 grams per meal, 300/day. Not sure if I should stick with the whey or go back to gainer, Cytosport. Doubling my carbs, I may not need the gainer.

Take a few weeks to gradually up the calories. While it might not be totally necessary(I've been able to go from one extreme to the other without too much fat gain) it's probably better to be safe than sorry.
