The additional muscle mass usually reduces speed. If he wants to have the benefits of muscle mass without become too slow, then he should focus on explosive movements. In MMA, you need to be explosive. You don't have much time to get the job done.

I am much stronger when I use explosive movements. I think I get more results from high intensity and explosive movements.

I agree that the specificity and character affect the speed qualities, what needs to be trained, then it is necessary to develop.
 
I would eliminate a muay Thai session per day. That's excessive if you are trying to roll and throw weights all the same. The only way you train muay thai twice a day is if you are only training Muay thai alone. I've been there and it has to be a full time job. The good thing is that you're on gear and will recover quicker. Good Luck.
