Fermented Foods

So I've been trying to work more fermented foods into the diet lately. Primarily for gut health, but also because I get tired of plain veggies day in and day out.

Issue I'm running into is lack of variety. About all I've got to work with locally is Kraut and Kim-Chi when I can find the stuff without shrimp.

The former I tolerate, but it keeps me craving brats and polish sausage. The latter I really enjoy...also on brats and polish sausage. But I don't mind eating it on its own either.

There's a fair deal of Kombucha going on as well. I've cultured my own in the past and I'm probably heading in that direction again.

But I'd still like a bit more.

So...anyone else ferment their own food or have a favorite food item? Gimme some ideas y'all.
 
Sour kraut goes great with some spicey turkey sausage which isn’t a bad meal macro wise at all.

Kombucha is great, as you mentioned.

Don’t forget yogurts as well; tons of flora for gut health. Greek yogurt is great macro wise and gentle on most people.
 
Greek yogurt with honey and granola for a snack is awesome

I have no clue how to make kimchi like stuff or I would have my fridge stocked.

Supposedly fairly easy to make your own kraut or kimichi if you have the fermenting pot for it. Just a bunch of cabbage, salt, seasoning to taste.
 
All you need is a wide mouth quart jar. Get the amber glass ones.

Four for $10 at Walmart. Lol.

Give it a shot, it's not hard at all.
