The purpose of pinning EOD is to keep blood levels stable. The purpose of keeping blood levels stable is to mitigate side effects.MWF is fine.
Pinning EOD you trough values are more or less half of your peak
Pinning E3D puts your trough value around 1/3 of your peak value, which is a large swing
I know this isn't a MWF schedule, but by waiting from Friday to Monday, which is 72 hours between, you'd be getting a large swing in blood concentration, about a 66% reduction from peak. From Monday to Wednesday and Wednesday to Friday, you're getting a 50% reduction in blood concentration from peak values.
Some people probably can survive just fine on a MWF schedule, but if this forum is actually about risk mitigation (which I believe it is), then Err on the side of caution and pin EOD initially, then if you want to experiment with less frequent pinning, go for it.
