Lol thats so wierd you would menton shine. We went out to my Aunt an Uncles Christmas Eve an drank a lil shine. My uncle has his own distillery an makes 50gallons at a time. He said that its legal to have your own distillery an for each person in the household that is 21 an over can have 50gallons of shine for his personal use. Anyways lol, he had spme really good tastin lemon aid, berry, an cherry shine. The fruits were actually in the mason jars floating around lol. He personally prefers his straight white lightnin. Nah man that's the good shit!...shake that jar and check the bead thats how the good ol boys proof it. Quicker the bead clears the better it is (higher proof) and when it burns blue you know it's good enough to take to town, run your truck, or make you do the Popcorn jig.
The best and real brandy is still clear just from fruit mash, tastes like fruit but still burns blue. The only exception would be some apple pie recipes where you still use apple mash but add a cinnamon stick to the jar so it does take on a little color with aging. These days guys take sugar shine cause its cheap + easy and add fruit after the fact. A step up is use real corn mash whiskey then add fruit and few spoons of sugar and age it 3-6 months underground. Your uncle saying he likes it clear don't necessarily mean he likes straight corn whiskey, he just knows his shit....very few ol timers left still keepin that alive.
