Turn off heat, add a little bit of crushed rennet tablet and stir for 30sec. Cover and leave alone for 5-10min.
When you come back, it'll look like very soft tofu. Cut a grid pattern into it and gently stir:

Use slotted spoon and pull out the curds, drain off some of the whey:

Put in microwave and hit it for about a minute in the bowl. Drain off more liquid. Then put back in microwave and hit it with 30sec bursts until it gets to 135. Stretch it out and fold it with some kosher salt.
Then, eat.

On a side note i also feed my milk raw grass. Just unscrew the top and stuff it in
workout days I eat between 5000-5400 calories, I aim roughly 50/30/20 p/c/f.What are your daily macros if you don't mind? That breakfast is about 3/4th's of mine!

I was tying one on with the family last night so getting a coherent response would have been nearly impossible but you deserve some props man. Looks killer. I can't believe that I've never thought of trying that, especially the ricotta. I'm a canolli whore. I'd sell myself for a few good canollis!I knew there was gonna be one of you to say it... lol.
Ricotta is even easier... Heat whole milk to 200 degrees, add some citric acid or a little bit of vinegar, wait ten minutes and pour into a cheesecloth lined sieve.
