I make a "superfood salad" using kale .....

SUPERFOOD SALAD

Original recipe makes 8 to 10 servings

  • 3/4 cup white sugar

  • 1/2 cup vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1/4 cup extra-virgin olive oil


  • 1 bunch kale, stems removed and leaves chopped
  • 1/2 (16 ounce) packagefrozen shelled edamame (soybeans), thawed

  • 1/4 red onion, sliced thin

  • 1 cup shredded carrot

  • 2/3 cup fresh blueberries

  • 1/2 cup sweetened dried cranberries (such as Ocean Spray® Craisins®)

  • 1/2 cup cashew pieces

  • 1/2 cup shelled, roasted sunflower seeds

Sounds good. I'm going to give that salad a go. I just have to replace the edemame with something else. I'm allergic to soy:(
 
I love when protein arrives on my door step. I know bars get a bad rep but I love these. They are 100% all natural and taste amazing.

They used to be bigger and had more protein. Now that thier smaller and have less, I slap some almond butter on them
