What R U Eating ? ~OGH wants to know.....

Nothing new up here . Sister stable , gonna hit the gym here . Its actually a huge senior citizens complex that's close to my parents with a big Universal machine (nice leg press) and lots of old school weights . And no one uses it ....later guys ~Ogh
Great to hear your sis is stable...that has to be good news. Hope she'll pull through quick enough. Bet you wish you got your hands on the drunken bastard and you'd give him a good piece of your mind!

Tonight i oven roasted some san marzano tomatoes with onions, garlic, and oregano in a casserole dish until the edges were blackened (very important). I added some water to the roasted tomatoes and simmered it to a sauce consistency in a separate pot. And earlier today i baked some home made meatballs with lean beef and lean pork along with Italian breadcrumbs, egg, fresh herbs and spices. Then boiled up some angel hair pasta and mixed the roasted tomato mixture with the pasta and added a couple meatballs. Grated some fresh parmigiano reggiano cheese over the top and was very happy happy. :)

Edit: you can add a splash of red wine to the casserole dish to help remove the fond off the bottom of the pan after you take it out of the oven. I didn't tonight, but often do. It provides a bit more depth of flavor to the dish.

Red wine is great for deglazing and tastes great when you add it back into the dish

Well my day is fucked. I'm out of town working and I left the hotel to early to catch brekfast. I spotted a vending machine at the plant I'm working at and of course it won't take the only 5 I have on me. It's gonna be a long day.
