Your lunch chicken looks perfect with the teriyaki glaze going on @Dirthand !

Here is what I am working on right now... 8am baking, yeehaw. Just invented a random kind of cookie cake recipe. Trial run for a gluten free birthday cake.

Made with homemade rice flour, coconut (mct) oil, honey instead of sugar, and dark chocolate... also cinnamon, salt, baking powder, and two eggs.

Aw thanks @Ateam2023 for your conpliment :D

(Your chicken and meals always look yummy too though from my view... Your prep spreads actually inspired me to try having some veggies with my chicken for the first time in forever, with a few meals last week. ✨)

I bake my chicken breast in a toaster oven @ 400°F, "Convection Bake" setting.

I can share my recipe and timing for frozen/fresh, if you like?

For me, this thread is super-nostalgic.

I did meal preps & Tupperware FOR YEARS. Never missed a meal or gram of protein.

Love to see it.

i am having no problems hitting my protein goals atm , i only use one shake of whey isolate and the rest is chickem , eggs, yogurt, milk, I even half to watch i dont take in to much lol ,, i hear you can eat to much protein and just piss out the overflow or its even stored as fat maybe,,? Alot of different avenues when it comes to "protein intake" ,,

I don't think anyone's eating too much protein. But if so...

The only thing that gets pissed out is urea from amino acids. That's good because otherwise it'd be toxic.

The carbon skeletons are primarily stored as liver glycogen.

In overfeeding scenarios, it's usually dietary fat that gets stored as body fat. Certain amino acids theoretically could be converted to fat but unlikely. It's just so much easier to store dietary fat to cover the surplus.

that looks amazing , how did they turn out taste wise?

Thank you! :D They turned out reeeally good. Already gone lol, ah well. Perfect treat after lawn mowing adventures yesterday.

I really like using coconut oil for baking sweet treats. It pairs well with the rice flour to keep the baked goods relatively moist. No coconut flavor added since it is MCT... actually it was my first time using MCT oil. Usually use melted coconut oil from a jar.

Now pondering about making some sort of breading for chicken breast using rice flour.

Thank you.. I cant take the credit tho.. I but the chicken all ready I just throw it in the air fryer.. ive ate that chicken at least 4 nights a week for the last 16 months.. lol decided to switch it uo for lunch.

You're welcome... well, it looks air fried to perfection, and really all of your meals look amazing so credit is due! :P

I think I may be the only one here without a air fryer? How much am I missing out? :0 Relying on a toaster oven for most of my chicken-ing and other meal making/baking...

I think the only difference is the convection part of it. Which allows for the heat to be applied more evenly and so it cooks faster but I couldn't be for certain...
Peace

Yeah baking and toasting are fine like an air fryer. The point is not having to use a load of oils so your meals can be low fat.

Aluminum free baking powder, right?

i use an air fryer @400F and have it down to a "juicy art", i have ditched prepping my meat for 4 days in a row in containers , so now i have been cooking the chicken the night of, i still prep my potatoes&veggies for meals , , Once you get your timing down on the chicken and device cooking it , its like rinse&repeat,,

Thanks for your input @Dirthand @AlexDavis43 @Ateam2023 that makes sense. Now I am really curious how chicken cooks up without using oil... Any of you want to share some close ups of your chicken breast post-air fryer some time? lol. (I will check out Google and YouTube of course...)

I use extra virgin olive oil drizzled on chicken breast, plus a bit around the pan to mix with the juices. Works out great for making a few eggs in once the chicken is done.

edit - But I can understand the way EEOO adds up when tracking foods allowance.

Thank you for mentioning this! Going on my shopping list now.

Today's very original and unique chicken breast prep adventure:

Frozen mixed veggies always look so good & colorful but they never found their way into my grocery cart. I'm definitely picking some up today.

Frozen mixed veggies + meat + a carb = nutrition easy mode

Or double the serving of vege to cover your carbs
