Advice On Diet Please

I'm confused, the OP said he's gaining weight at the current calorie level (went from 198 to 220 lbs is how it reads to me) and most replies are telling him to increase calories?

I suggest this.

Find maintenence

Then use these rough macros until you're in shape

.5-.75g fat/lb
1.5-2g protein/lb

Play with them.

This will get your insulin sensitivity back.
I suggest doing this with less than 50 carbs a day then reintroduce carbs in the form of a postworkout drink

How do you get away with eating that much fat, 240 grams is a lot, I would gain so much body fat
I know, you'd think, right? But, for me personally, higher fat has never yielded higher fat gain for me. Now, that's my personal experience, so it could be different for others...

Many people respond better to higher fats. Many have the misconception that eating fat will make you fat. Especially women! lol... I also like high fat compared to carbs and always keep my carbs low.

As for the OP, and even you WP, I think we chatted briefly about this. When you cook your rice, or any grain, (and I know you don't handle dairy but hear me out) soak the rice overnight in some greek yogurt and water mixture, when ready to cook it, rinse it well till water runs clear. Then add fresh water and whatever else and cook as usual.

I have a sensitivity to certain carbs and dairy as well (not to that extreme though but it does make me feel sick) and what I have found, and this is an old method (along the same lines of what fermenting does - and I know you love your Kombucha) - it "pre digests" it so it is easier to absorb and all the nutrients and minerals are released that are typically blocked so you benefit more from it this way. It works for me and few others I have suggested this to. It's an idea and worth a try.
