Bread

Bread is awesome if you need many calories, my opinion is that bread beats the rice at nutritional value, even white bread is better.
But, as a rule, yeast is used in bread and this is a bakery product, and with a large amount, there may be problems with the absorption and severity of the gastrointestinal tract. I have bread, if there is a lot of it, it is immediately heaviness in the stomach. Rice is the perfect carbohydrate for me. Maybe I'm doing something wrong

I have been utilizing bread to get carbs.

Does anyone else utilize bread to get carbs?

I find it easy to eat alot of it and its delicious with oil and vinager.
As I wrote earlier. I also tried it with bread and of course with butter. But with a lot of it, my stomach was overwhelmed. But when I used rice, but it boiled too much, and coconut oil, it helped me gain carbohydrates

I eat bread, I don't give no fucks what anyone says about it. Bread isan awesome fold. That said, all my bread is homemade sourdough. Definitely has a substantially lower glycemic index than store bought (and its better tasting ;). We always use King Arthur organic flours for it. Proof it overnight in the fridge. Cook in a dutch oven. Our starter is going to be 4 years old in a month or so! :)

I'll add that we use sourdough for EVERYTHING. Pizza crust, pancakes, waffles, cinnamon rolls. It's really really good.

Daves Killer Bread!
Dude this guy is the shit though:

"Dahl has lived a storied life that included a 15-year term in prison for drug possession, burglary, assault and armed robbery. His story of redemptionas founder of a successful bread company is part of the allure of his line of organic bread first introduced at the Portland Farmer's Market in 2005."

Got a recipe or is it a secret?

Got a recipe or is it a secret?
Yeah I do, I will get it and post it in a bit. I'm not weird about keeping recipes from others lol

Sourdough is super simple. It is much easier to digest than other bread because the yeast partially digests and breaks down the gluten and carb..

800 grams king arthur organic bread flour (can also do half whole wheat or use all purpose)
350 grams Sourdough starter
400 grams water
20 grams salt

Mix them all together. You need to learn the techniques to shape the bread
Also can search for the slap and fold technique. Theres lots of videos online showing how to shape your loaf.

Then you either let it proof at room temp or at inbthe fridge. Room temp is faster and the fridge is slower

If in the fridge then take it out a few hours so it can warm up before baking.

You also can use a razor or something similar to cut a vent in the top of the loaf. Otherwise you may get a bulgy-uneven load

Im a huge sour dough fan. My ex is from the Bay Area and ive eating tons of sour dough over the years!

Thanks for the recipe! I am gonna make some this weekend with my kids. They are going thru the cooking phase right now.

Is there a better sour dough starter than others?
Can you get the flour you suggest at the grocery store or do you order it?

You can getKindg Arthur flour at many stores. I haven't seen it at like food lion or Ingles, but I've gotten it at natural foods stores or I think n Trader Joe's out while food. il jjust order cases of the different flours of their website though.

We never bought sourdough starter. We just made its fun scratch. You just get the good flour, add water, keep at room temp, then every day or two you "feed it". Basically you take half of the starter, discard/throw it out, then add more for and water and mix it in.

After a few weeks you can start to use the discard for making bread and pancakes and stuff. Then eventually got can start to keep your starter in the fridge so it doesn't need to be fed as often. We feed ours once per week now. Take it out and let it sit to reach room temp before feeding. There's some good blogs and YouTube videos on how to start and take care of starter.

So you probably won't be able to Make sourdough bread this weekend. Your starter needs to stabilize first. Before it will start to taste good

I read, I lick, I continue to lick. Homemade bread, pastries, pizza and all with your own hands. It is very cool. A great option, you need to motivate your wife, start baking bread and other food too.

Thanks for the recipe. Showed my wife, she promised to try to do it. She said everything is not very difficult and it should turn out delicious.

Haha yeah i know what you mean, I'm way ahead of you with that though! She is the one who cooks almost all of the food now. She makes 80% of the food nowadays ;) all from scratch, she even makes homemade egg noodles, right now we have chicken and dumpling soup, a whole dutch oven roasted chicken cooked in a bed of potatoes, carrots, celery and onion... she loves to cook and make me foods of all ethnicities. I'm fucking spoiled as hell my man!!

Most definitely! Yeah it's super easy, most of it is just waiting. Having a dutch oven is hugely helpful too in getting it to cook evenly without burning at all. Line the top and bottom with tin foil then parchment paper in between the bread and foil.

Getting the cooking time down is tough, our old ass oven needs to be broiled 475-500 for an hour covered then like 15 mins uncovered to brown the top nicely and get that good crust that's not TOO thick andtough but nice. it's all an experiment though, depending on how you like your bread and your particular oven. have fun and enjoy!! :)

One last thing, the ingredients mix easier if you mix the starter with warm water, thdn add the flour. Not all at once, that can give you chunks of flour.

You are a damn lucky man. I would say so. And I’m sure that homemade food is much better digested, but I’m not even talking about taste at all. Especially if the wife loves to do it, it's straight you snatched the best woman. My congratulations.

I write everything down in my notebook and show it to my wife. And she answered me, we will start with buying a stove for home. If you want to eat delicious food, buy me an oven. If necessary, we will buy. And we will try. Thanks for the recipes.

I just can't bring myself to eat anything but Keto bread. Holdover from low carb dieting I guess. I try not to eat bread at all. I get my carbs from sweet potatoes. A hot sweet potato with butter and salt is the best taste in the world to me.

Hell yeah man! Always love sharing some good recipes. I have a few more I may need to post around here. We have quite a few originals that I know people would enjoy ;)
