Yellowtail and albacore is white tuna. We catch it ever year and make sashimi out of it. 100% agree with everything else though.
My apologies. I didn't explain it correctly. Yes albacore is white and yellowtail on a sushi menu is called yellowtail. What I was saying is that there is a fish on sushi menu's that they label as "white tuna" and that one is not tuna at all. It is white and it has a buttery texture and a rich flavor. I actually like it. It was one of my favorite fish on the sushi menu. I'm also very fond of yellowtail. I came across an article that was a warning not to eat white tune and what it explained that the fish that they call white tuna is really a bottom dwelling fish called escolar and it has a naturally occuring oil that causes the condition Keriorrhea. Google Escolar. So I'm not saying that there aren't tuna that have white meat I'm saying that the tuna that they list as "white Tuna"...no such thing. It's Escolar and don't eat it because you may leak an orange colored oil from your asshole and that is not good
