Goose

Method 1- cook goose breast in oven till pink. Do not fucking over cook it, or it’s shoe leather. Slice into thin slices .

Add chutney of your choice (whenever you like to pair with beef, that’s the flavor profile of goose)

Method two - brine goose breast. Crockpot and add bbq sauce. Works in a pinch.
 
Frog legs

Peel and separate rear legs. Soak in buttermilk. Egg wash and bread in your flavoring. A bit of spice goes well with frog legs. Pan fry in your choice of fat. Eat like wings.

Goes especially well with some kole-slaw

You ever soaked duck or goose in salt water and /or milk to get some of the gamey taste out of it?
 
My bad. I missed the brine part. Man I love to kill and grill.
