A friend recommended pecan, pretty good. I do a lot of hickory and apple, I usually blend the two. I think it's my favorite way honestly, even though the pecan is pretty solid. I hit it up with plenty hickory right out of the gate and then add apple until the meat is done. Hickory can be a little pungent if overdone.

Almost. But unless those are beef ribs I'm ok. I'm starting my "official" prep today as for as macros, so the next 13 weeks I'll be cranky

Stick with it buddy, if you weren't 5k miles away I'd buy you a legit prime rib in 13 weeks + 1 day. :)

I do the 3 2 1 method, and only smoke with the pecan for the first few hours

That's the best way to do ribs IMO. Most meats are done taking smoke after the first few hours anyways. The hickory/apple blend I do is more for bigger cuts like pork shoulder or brisket.
