I put 8 lbs of dreadful chicken breast in the crockpot 8hrs on low. Shredded it with two forks and divied up 8oz each in tupperware for each days lunch. Problem is breast is dry and tasteless, a big reason why i generally avoid it. Thighs or legs are much tastier in general and hold more moisture. To remedy this i mix the shredded breast with 1 serving of rice each and soak the mixture in chicken stock and mix well. Gives it a saltier taste and hydrates the dish. Top with half an avocado.

I am all about chicken stock to rice dishes for moisture. I’ve been a soy sauce guy and am trying to get away from it. When you batch cook rice it’s hard for it to stay moist and to eat it dry.

Get an instapot... honestly nothing better for chicken and cooking it well. Ovens and crockpots just dry it out.
 
My new Samsung oven bakes chicken wicked good. I fucking love the thing. Crockpot kills most of my chicken dishes though, unless it's cream based or something like that.
 
Busy weekend forgot to put up my meal prep. Went with grilled chicken then shredded with Spanish rice with diced tomatoes and a can of fiesta bean mix. And whole wheat pasta with ground beef. 2 cups of rice and half lb of chicken each meal and 1.75 cups of pasta and half pound of beef with each meal.
