Looking good. I cooked fat side up for first 2 hours. I am of the half who believes that the fat soaks through and moistens the meat, then I turn it. There are some new age blogger turds who will tell you otherwise. But I think they just want to seem relevant and come in with "shocking news" about how to cook a brisket lol... fuck em.

I couldn't have done this type of cooking when I was younger, too impatient. But it is coming out nice so far.

And some Sin Valley OG and "light" beer (everybody just said "this guy doesn'thave abs".. lol)

The Rendered fat soaking through the meat is what. "barbaco" is all about. Kids now a days dont no squat. Burning some Northern Lights while smoking some meat... Cant go wrong. Maybe some Pork Belly?:)
