What R U Eating ? ~OGH wants to know.....

I want to try eating bison ( I ate only once bison burger ) .
Wondering you guys has experience with ?
Any good recipe?

I like it, It has a higher fat content, And I used it the last time I made chili. Gives it a gamier flavor which isn’t for everyone but I like it.

I think they're pretty easy personally, some people seem to think they're really hard but that hasn't been my experience. Ribs are actually the most difficult in my opinion... I use wood fire to smoke them so they can get burnt around the edges before they are up to internal temp. I always wrap ribs.

If you do just the flat, it's even easier. That would probably be a good way to start and it's enough for two or three people generally.

Doing a whole packer brisket is more complicated. They need trimmed pretty heavily. The point will still have a lot of fat that hasn't rendered out when the flat is ready to come off the smoker... I think the best way is to wait until you have the flat where it needs to be then pull it off and cut the flat off of the point. Put the point back in until it's done or make burnt ends from the point, I think this is the best way. Cut the point into cubes and glaze in a foil pan and put the pan in the smoker for a little while. The point can be so fatty it's kinda gross... Just have to keep cooking it down until the fat has rendered out.
 
I sorta feel your pain. Around 4 years ago I ate a shrimp poboy at a Hooters restaurant. Quickly after I had a bad reaction and broke out in hives. Since then I've had half a dozen allergies from shrimp. Its like you said, its hit or miss. All of my allergies have luckily only came from shrimp from a restaurant. I live along the coast so now when I want shrimp I buy fresh and cook them myself and this has worked for me thus far. I eat seafood once or twice a week and would be devastated if my allergies worsened.
I have a coworker who said she used to eat shrimp like there was no tomorrow and one day she had a bad reaction. She said she has never been able to eat it again and said that’s what happens - if you have a reaction to it, you’ll never be able to have it again. Was the first I’ve ever heard that.

Just this past Monday I had shrimp, red snapper and crab and had absolutely no reaction. It’s because it was all fresh from the gulf. I only get reactions from shrimp when I eat at major food chains like Hooters, chili’s, etc.. It’s because those major food chains import their shrimp from over seas. Most of it comes from Asia. I live in a gulf state and only eat local/fresh now.

I watched a show on Netflix a while back on food allergies. It’s crazy because these allergies didn’t exist until recently. (last 50 years or so).

I had a very good friend in Alaska die from a allergic reaction to King Crab ; the guy had ate it his whole life but this one time it didnt work . Allergic reactions can occur everytime or just that one time .

I would BEWARE of seafood if I was you , or see if a doctor can give you something in case of a attack (Epi-pen)....;)

So far I’ve only had reactions from shrimp from overseas. I hope that stays the case as I loveeeee seafood!!

Prolly cuz it was raised in "night soil" or fecal sludge if you prefer that term

My wife friend had same thing, She use to love shrimp and all kind of fishes ( island girl ) one time she got the allergy ...
She can't touch any seafood anymore ...

That would definitely make life suck man. I couldn’t imagine going through life without seafood.
 
NEVER eat imported Asian seafood , loaded with US banned antibiotics (like Fluoroquinolones) . Your reaction might have been to these antibiotics....

Agree and honestly if you can buy wild caught by all means go there first or at least quality inspected and certified if farm raised. Some of these import farms just feed the fish/shellfish pure garbage and crap for lack of a better term.
