Sundays are my only day off so I had some time to prep for the week.
Took two large casserole dishes lined the bottom with brown rice, added 2lbs pan seared creole tilapia, and then topped it with a simple sauce made from greek nonfat yogurt, sweet potatoes, gala apples, and canned sweet corn.
Should be enough for a day or two and the Tilapia was like $5/lb.
