Thanks man! I made a "no weld" charcoal basket for it and it makes a huge difference with fire control. I have a good digital thermometer otw from Amazon. So today is a test of skill with no knowledge of grate temp. I'm gonna spritz it down with apple cider vinegar in an hour then check it around 12:30. If the fat has split on top then I'm on track. Hopefully it goes well.Youve really been using that OK Joe BBQ since you restored it . Good job and keep it hot and smoking !
She's getting there! Just wrapped it cause it's raining....again (I gotta get a tent/canopy). Few more hours till chow time.
2.5 hours in and spritzed it down. Then wrapped around 5.5 hours with internal temp at 150°F
