You buy the gyro meat pre fab? Or an actual recipe? Interesting, I have no clue on that process.

From scratch my man.

Take a pound each of ground beef and lamb and mix with 3tbs oregano, plenty of garlic, salt pepper. Bake like a meatloaf for 45 minutes or so @ 350. Chill in fridge for an hour or two. Then slice it and fry it in a pan with oil. Finding ground lamb is always the tough part for me.

Nice. I have no doubt it beats the pants off the frozen stuff. I'll be trying this at some point, diet and time allowing.
 
Turned out pretty damn good for my first brisket. I plan on smoking something every Sunday for a while.

Yeah I am diging the cruise for now, June blast will be clean eating and a restriction from this thread... I'll enjoy while I can.

You go odie.... next time try smoking for 14 to 16 hours at 220* and let.me know if it is more tender.

I smoked it at 220 for 9.5 hours. I feel like that was an hour to much. It's tender and very well smoked but has absolutely no pink. It's well done. I like my meat with some pink still in it. They say for every pound to smoke for 1.25 hours.

That is cool, it looked awesome as Texas brisket should.

Oh yeah it was a great brisket. I bought the brisket from the same place the Texans get their meats for their tailgate parties. ( H.E.B )

They also say to let the internal temp get to 185 degrees. From now on I'm only going 1 hour for every pound and probably an internal temp of 165. I'll get it down to an art. I want to become a pro at this. Lol

Yeah TX is fun bud. I got tickets next Monday for the Houston Rodeo. All y'all Yankees probably hear the word rodeo and don't think much but it's actually one of the biggest things to hit TX every year. It's a all day event of the worlds biggest cook off, huge fair grounds, rodeo and a concert. It's held at Reliant stadium ( Texans stadium). I bought tickets the night that Miranda Lambert plays. I hate today's country but love her cause we grew up close to the same area. I used to see her at the bars I would go to in Lake Charles before she became famous. Anyway TX is a great place. I live in an area where I can be on a lake,river, creek or ocean with in an hour. All I need is to be surrounded by water to make me happy. We never got a winter this year. I was on the bass boat last weekend matter of fact. Come on mindless I'll save you a seat on the boat.
 
Yes great fishin weather lately. Unbeatable really...What's biting?

I caught 6-7 of large mouth bass last weekend but they were real small. The locals were bringing in some real nice size ones. Also saw a a bunch of guys had catfish and crappie on the fish fillet table. I just got to figure out what the fish are doing this year. It's been such a weird year for fishing. In July at the lake it was 15' higher then usual and last weekend the lake was 2' lower then usual. I fished in 4'-8' of water in the cove and usually do good but didn't this last time. Probably have to go a bit deeper next time. The water is warmer then usual for this time of year so I guess their deeper.
