1/2lb of ground chicken seasoned with Mrs. Dash sodium free extra spicy seasoning (not spicy at all, by the way), brown rice and red lentils. Mixed vegetables, peanuts, skim milk and water on the side.

Cheap, easy to make a lot of and portion out for work and tastes decent.
 
Magret de Canard (except I use Moulard Duck).. Herb Roasted fingerling potatoes. Of course they were roasted in duck fat!

I've never been able to do it, I just perfected poached eggs recently...souffle has always eluded me.

It took me a few times to get it right. The first time they fell (the center crashed). I love a good poached egg over beef tenderloin with hollandaise; eggs bendict without the bread..
