Crock pot pork butt/shoulder is a great way to go as well. Again, low and slow like you said.I have done regular pork loin several times and each time was great. Can't speak for butt specifically but assume you'd want to lower the temp and let it go for a good while longer than a loin.

Didn't brine it. Took maybe 7 or 8 hours. I put a pan under it, but it wasn't in the pan. No gravy while cooking. Every now and then I coated it with butter to keep it moist. There are pics somewhere in this thread. It'll change the flavor of your dressing in a very cool way.Did you brine it? You remember how long it took?
