I have done regular pork loin several times and each time was great. Can't speak for butt specifically but assume you'd want to lower the temp and let it go for a good while longer than a loin.
Crock pot pork butt/shoulder is a great way to go as well. Again, low and slow like you said.
 
Smoked turkey changes the game on Thanksgiving. I did a couple last year with hickory wood. It was phenomenal :)
Did you brine it? You remember how long it took? Also did you do it in a pan to catch drippings for gravy or use a packet or something? Sorry for all the questions

Didn't brine it. Took maybe 7 or 8 hours. I put a pan under it, but it wasn't in the pan. No gravy while cooking. Every now and then I coated it with butter to keep it moist. There are pics somewhere in this thread. It'll change the flavor of your dressing in a very cool way.
